Trout with Almonds
To make the sauce, melt the olive oil and butter in a small frying pan, shake in the almonds and sautee them until they are brown. Watch and stir the pan constantly as they can go from golden to burnt very quickly.
 
Thai rice and seafood soup
Scrub the mussels and put them in a heavy iron frying pan. Cover and cook over a high heat until they open. Throw away any that refuse to open
 
Tuna & Horseradish Burger
Thinly slice the spring onions, add to the mince with the coriander leaves, horseradish sauce and lots of salt and pepper.
