Serves six
Ingredients
6 hake fillets
6 shallots
3 tablespoons of olive oil
4 tablespoons of bread crumbs
a quarter of a bunch or parsley, very finely chopped
2 onions sliced very thin or grated coarsely
250 ml of cider
salt and pepper to taste
 
1. Preheat the oven to 200 degrees C
2. Wash the hake fillets and dry them with a paper towel
3. Heat the oil in an oven proof pan and fry the onion and shallots for 2 minutes.
4. Cover the pan, reduce the heat and simmer for 10 minutes.
5. Add the cider, bring to the boil and reduce to a third of its original amount.. Remove from the heat and set aside.
6. Season the fish with salt and pepper, add it to the pan and spoon over some of the onion mixture.
7. Sprinkle with the parsley and crumbs and drizzle with a bit more oil.
8. Bake for 15 minutes.
9. Serve immediately.
